Holiday Pistachio Brie Bites (with Collagen Fig Honey Glaze)

Jump to recipe

If you’re looking for a quick holiday appetizer that tastes gourmet but comes together in minutes, these Pistachio Brie Bites are it.

They’re flaky, buttery, melty, sweet, salty, and festive — the perfect little bite for Thanksgiving, Christmas, holiday parties, or cozy nights in.

I added a tiny secret ingredient that makes these even better:
½ scoop of Vitauthority Multi-Collagen stirred right into the warm fig-honey glaze. It dissolves perfectly, doesn’t change the flavor at all, and gives the glaze an extra smooth, glossy finish — plus a little protein boost. I’ve been using this collagen for over a year now and love how easily it blends into holiday recipes like this.

Let’s make them — you’re going to want to save this one.

Why You’ll Love This Recipe

  • Only 20–25 minutes total

  • Uses store-bought puff pastry (so easy)

  • Melty brie + pistachios = holiday perfection

  • Collagen blends seamlessly into the glaze

  • Great for hosting and potlucks

  • They look fancy but require zero skill

Ingredients

Brie Bites

  • 1 sheet puff pastry, thawed

  • 1 small Brie wheel (or triple-cream Brie)

  • ⅓ cup pistachios, finely chopped

  • 1 egg + 1 tbsp water (egg wash)

Collagen Fig Honey Glaze

Instructions

1. Prep

Preheat your oven to 400°F. Line a baking sheet with parchment paper.

2. Cut the Puff Pastry

Cut puff pastry into 2-inch squares (12–16 total). Arrange on your baking sheet.

3. Add the Brie

Cut Brie into ¾-inch cubes and place one cube in the center of each pastry square.

4. Pistachios + Egg Wash

Sprinkle pistachios on top and press gently.
Brush the pastry edges with egg wash.

5. Bake

Bake 12–15 minutes, until puffed, golden, and the Brie is soft and melty.

6. Make the Glaze

While they bake, whisk together:

  • fig jam

  • honey

  • ½ scoop Vitauthority Multi-Collagen

Warm for 5–7 seconds in the microwave to help it dissolve smoothly.
Add warm water if you need it thinner.

7. Finish + Serve

Drizzle the warm bites with the collagen glaze.
Add flaky salt, extra pistachios, and herbs.

Serve immediately — they disappear FAST.

Tips & Variations

  • Use triple-cream Brie for extra meltiness.

  • Swap pistachios for pecans or walnuts if you prefer.

  • Add a tiny pinch of nutmeg or cinnamon for a warm holiday flavor.

  • Double the batch for parties — trust me.

How Vitauthority Collagen Fits

This recipe uses ½ scoop of Vitauthority Multi-Collagen directly in the glaze, giving you:

  • a glossy finish

  • an easy protein boost

  • zero flavor change

  • a natural way to incorporate collagen during holiday cooking

It blends beautifully into warm sauces, glazes, and marinades — one of my favorite “sneaky” ways to use it.

Storage

These bites are best fresh but can be reheated at 350°F for 5–6 minutes.
Glaze can be prepped 3–4 days ahead.
